Paracombe is a small family-owned winery that’s working sustainably, organically, and biodynamically. Pouring a slight blush hue from spending a short period on skins, their Pinot Gris is crisp and lively with notes of fresh pear, honey blossom, and spice with lovely fresh acidity. Gioiello Chardonnay 2019

Rich and complex Tasmanian whisky, which was matured in French oak casks previously used to age sherry. Dried fruits, chocolate, menthol, and cinnamon with hints of dried hay and roasted nuts. The perfect way to end a hearty feast! (700ml) 43% ABV

Outstanding Nebbiolo, from one of Alto Piedmont’s premiere producers. Delicate red florals lead into juicy fruit, fine tannins, a hint of cocoa, and a saline note. A very special wine which you really ought to try!

A delightfully Australian take on the classic spiced rum, from Brix in Sydney. Infused with Native Australian Lemongrass and Bush Currants, roasted macadamias, and locally grown mangoes & grapefruits (alongside a cheeky addition of cinnamon & vanilla - because spice). Goes beautifully on its own or in your favourite cocktails (Dark & Stormy anyone?), this is all sorts of deliciousness. (700ml) 40% ABV

Hailing from Sicily (as opposed to Pinot Grigio's spiritual home in the north of Italy), this wine showcases lovely balance and freshness, with classic varietal characters of fresh-cut pear & spice followed by a little chewy edge and chalky, talc minerality.

Bang for buck Pinot Gris from the excellent Peter Logan in Orange. Very easy-drinking, with pear, white peach, nougat, blood orange, and even a hint of almond, alongside ripe lemon pith.

Logan Weemala Pinot Gris 2020

Skinsy Yarra Valley Pinot Gris, made by the one and only Dave Mackintosh of Arfion! Handled in quite a restrained way, this orange Gris has a delicate and balanced skin contact character, with subtle orange, tangelo, gentle sweet spice, and savoury tannin. Superbly drinkable!

Animale Amber Gris 2021

Versatile and gluggable Yarra Pinot, made by the one and only Dave Mackintosh of Arfion! Made using a mix of whole bunch fermentation and de-stemmed ferments & matured in old barriques. Juicy red berries, fresh acidity, and a sprinkle of savoury spice to bring it all together.

Animale Pinot Noir 2021

Jo Landron grows grapes almost as well as he grows moustaches (seriously, it's worth a google search). This is a beautiful Loire Crémant, made in a méthode traditionnelle style using biodynamically grown Folle Blanche and Pinot Noir. It's intensely mineral-driven, with flint and mineral salts leading into racy citrus and nectarine. There's just the right amount of gentle leesy texture to soften the edges, making for a complex and fantastically priced alternative to Champagne.
