Coming from Mauro Vergano, who once worked as a chemist developing flavours and aromas (though these days his creations are much more organic). For his take on one of Piedmont’s most famous digestif, he uses young Barbaresco and aromatises with quinine bark, cinnamon, cloves, cardamom, coriander, bay leaf, ginseng, and rhubarb.
