Melbourne's Bakery Hill has been at the whisky game for a while now, being one of the oldest distilleries in the country. Their whiskies are expertly crafted using 100% malted barley from Tasmania, driven by a misconception at the time of the distillery's opening that quality whisky could only be made in Scotland. Their Peated Malt is not as intensely smoky as whiskies found in Islay and other distilleries on the west coast of Scotland - instead, it focuses on a more Highland-style peatiness which produces a subtler, more earthy flavour profile.
