Piedmont's lesser-known white variety, Timorasso, is currently experiencing a much-deserved revival after it fell into obscurity around the mid-20th century. This is an excellent example of how good this variety can be, and will strike an emotional chord with lovers of Chablis. Pouring a light straw yellow, it has a delicate bouquet of citrus peel and acacia flower that leads into a textural palate of lemon peel, honey blossom, dried hay, and mineral salts with a gentle richness and fresh acidity.
