Though originally from the Jura region, it took Nicolas Jacob a while for his passion for wine to materialise. As if making up for lost time, Nicolas sought out the very best mentors of the region, and was soon under the tutelage of both Laurent Macle (of Domaine Macle) and Jean-François Ganevat - the former eventually taking him on as his right-hand man. After purchasing a small plot of land in 2015, Nicolas became a fully-fledged producer four years later when he purchased a small winery along with an additional five hectares of vineyards.

Les Chazaux is one of Nicolas' most recently acquired vineyards, with the vines approaching 40 years of age. The grapes were 100% destemmed, fermented with indigenous yeasts, and matured in neutral oak for nine months with no additions of any kind, including sulphur. It's bright and full of personality, with crunchy red berries, alpine herbs, and delicate florals framed by silky tannins and a slate-like minerality.
