Les Rescapés is made from 100% Savagnin from a variety of different terroirs which were blended together as a result of reduced yields from frost damage. It was aged on fine lees for four years, resulting in a textural wine with intense aromatics and chiselled acidity. It was vinified in a classic Ganevat fashion: farmed with either organic or biodynamic principles, with no additions in the winery and bottled without fining or filtration.
