Les Survivants is made from 100% Chardonnay, from a vineyard that suffered significant frost damage resulting in reduced yields. The 'surviving' bunches are intensely concentrated, however, making for a powerful wine with intense minerality and racy acidity. It was vinified in a classic Ganevat fashion: farmed with either organic or biodynamic principles, with no additions in the winery and bottled without fining or filtration.
